Thai-Style Spicy Sweet Potato Soup

This recipe got created by combining some of my favorite ingredients and out came this wonderful soup.
Both my husband and I loved the soup. We had fresh sourdough bread and salad with it and appreciated every bite.

Ingredients
- 1 tbsp coconut oil
- 2 medium sized sweet potatoes (I used orange ones), peeled and
chopped into cubes - 3-4 carrots, sliced
- 3 cloves garlic, chopped
- 1 small onion, chopped
- 2 tsp Red Thai Curry Paste
- about 2 cups vegetable stock
- Sea Salt and Pepper
- Fresh cilantro
Instructions
- Heat 1 tablespoons oil in large soup pot over medium-high heat.
- Add chopped onion and saute for about 5 minutes until the onion softens.
- Add garlic, sweet potato cubes and carrots and sauté for about one minute while continuously stirring.
- Add the Vegetable stock to cover the ingredients. If you need, add additional water.
- Bring to a boil and then turn the temperature down to simmer for about 20 minutes until carrots and potatoes soften.
- Use a blender or a food processor to puree the soup. Once smooth add the Red Thai Curry Paste. If you don’t like the spice, you can either use less or skip this step.
- Season with sea salt and freshly ground pepper and puree one more time.
- Divide into (pre warmed) bowls and garnish with fresh cilantro.
