Vegan Vanilla Coconut Oatmeal

As fresh berries are in season and at the peak of their yumminess I thought about creating a delicious oatmeal that melts the creamy flavors of coconut and vanilla with the juice taste of fresh strawberries and blueberries.

Healthy vegan Coconut Vanilla Oatmeal ~ serves 2
Ingredients
– 1 cup steelcut oats
– 2 cups water
– 1/2 cup raisins
– pinch of salt
– 1 cup coconut milk
– 1 tablespoon coconut oil
– 1/3 cup maple syrup
– 2 teaspoons vanilla extract
– pinch cardamom
– 1 teaspoon cinnamon plus a little extra to sprinkle on top
– 1/2 cup walnuts plus a handful to sprinkle on top
– 1 cup strawberries, 1/2 cup blueberries, 2 mint leafs (optional)
Recipe Instructions
Start by bringing steelcut oats, raisins and water to a boil. Then simmer on low for about 10 minutes. Stir on the coconut oil and coconut milk and stir in so oats get nice and creamy. Add maple syrup, cinnamon, vanilla, cardamom and walnuts and stir well. Divide into a serving bowls and sprinkle remaining cinnamon and walnuts on top. Decorate with fresh berries and a mint leaf (optional).
