Healthy vegan Vanilla Coconut Oatmeal

“Coconut oil contains a mixture of saturated fatty acids, some of which don’t adversely affect cholesterol levels,” says Joy Dubost, Ph.D., R.D., a spokesperson for the Academy of Nutrition and Dietetics. “But while its predominant saturated fat —lauric acid—does raise beneficial HDL cholesterol, it also raises harmful LDL cholesterol, which can increase the risk of heart disease.”

Healthy vegan Coconut Vanilla Oatmeal ~ serves 2

 

Ingredients

  • 1 cup steelcut oats
  • 2 cups water
  • 1/2 cup raisins
  • pinch of salt
  • 1 cup coconut milk
  • 1 tablespoon coconut oil
  • 1/3 cup maple syrup
  • 2 teaspoons vanilla extract
  • pinch cardamom
  • 1 chia seeds
  • 1 tablespoon freshly ground flax seeds
  • 1 teaspoon cinnamon plus a little extra to sprinkle on top
  • 1/2 cup walnuts plus a handful to sprinkle on top
  • 1 cup strawberries, 1/2 cup blueberries, 2 mint leafs (optional), shredded coconut

Directions

Start by bringing steelcut oats, raisins and water to a boil. Then simmer on low for about 10 minutes. Stir in coconut oil and coconut milk.
Next add maple syrup, cinnamon, vanilla, cardamom, chia & flax seeds as well as the walnuts and stir well.
Divide into a serving bowls and sprinkle remaining cinnamon and walnuts on top. Decorate with fresh berries, shredded coconut and a mint leaf (optional).
